Wordless Wednesday - Carmela - My Mom! Happy Birthday!

Today I'm driving to the city to visit my oldest daughter (NightOwlMaMa - visit here if you would like to see part of my mother's doll collection), and we're going to St. Mary's Cemetery in Chicago.  It was my Mother's birthday, March 29th.  The picture to the right is my Mom, her brother, and her sister (who they shared the same birthday, but Mom was 10 yrs older).  They are all together now.

She would've been 88 yrs. old, but she was a young 88.  She had enough as some of us oldsters would say "piss and vinegar" in her to put all of us to shame.  Mom use to live in Las Vegas for about 10 or 12 years.  She had she joined a singing group, tap dancing group, organ group, and the Italian Federation Club.  She was always doing something, but that will be another post.  I just wanted to say Happy Birthday, Mom.  I miss you tremendously.  There are days that I feel maybe I won't survive without you, but then I think of my daughters, and granddaughters and time marches on.  I love you. Until we meet again...

MY FUTURE WAS A WRONG NUMBER!

Yes, this is my husband and I back in September, 1991.  We were dating at the time, but how did it all begin.  Well, many of you had heard bits and pieces, and have been asking me to tell my story, so sit back, kick your shoes off while I tell you the story of the "Wrong Number"!

I was married for about eight years to my first husband. Let's just say he wasn't very nice, and call it a day. This story is a much happier one. In 1980, I was divorced, & became a single working Mom.  I was waitressing & scheduling my time around my kids schedule.  Waitress, bartending, cocktail waitress, cleaning homes, and selling toys wherever I could get work.  As time went on the kids were getting bigger, and we were just making ends meet, but we were happy & we were together.  My oldest daughter had gotten married, and I was in my middle 30's at the time and pushing 40.  I decided it was time to go back to school, and get a real job.  To cut the story some I got my G.E.D. & also got a degree as a legal assistant.  My cousin who worked as a legal secretary downtown told me about a job & I applied for it and got the job.  Woo Hoo I was on my way.

My cousin and I went back & forth to work together (she worked across the hall).  We also hung out together, and she wanted to fix me up with a blind date.  It was a Fourth of July party at our other cousin's bar.  Okay!  I don't do blind dates, but she talked me into it.  I did speak with him over the phone, so I was a tad excited, so I got the hair done & a new outfit.  So, we get there, & guess who was there?  BOWSER, from Sha Na Na!  He was funny & so cool!  I even got to dance with him.  Well, by now the evening is half over & guess what - NO DATE!  So, guess who went home a bit tipsy, and ticked off!  Yep, you guessed it.  MUUUWAHHHH! 

The next morning my phone was ringing off the hook it was about eight a.m., and as I stumbled everywhere to find the phone, my head pounding, the phone ringing, wondering where the kids were & why weren't they answering the phone, so their mother could sleep.  I realized it wasn't the phone, but it was my beeper.  So, I picked it up and looked at the number.  Okay, half a sleep I see this number that looked similar to my blind date's number I call the number.   "HELLO", he said.  Well, I let into this guy like there was no tomorrow, and yelling about him standing me up, and yelling that he was calling me or paging me at eight in the morning on my day off... blah -- blah -- blah -- and then I heard, "Excuse me, but who is this?""  Then I heard is voice clearly, and I said, "Who's this?", and he said, "Dave".  I should insert here that that wasn't my blind date's name, it was Paul.  OMG what have I done!!!  I apologized over & over again, and he forgave me, and then the sweet guy apologized for men being so mean, and standing me up etc.  (Okay, everybody goes AWWWWWWWWWWWWWWWWW right here).

So, I thought the least I could do was to talk to the man if he wanted to talk, and we did.  We talked and talked and talked, and talked for about 3 1/2 hrs., but then we both had a Fourth of July picnics to go too.  During which he paged me, and paged me, and paged me.  Finally when I got home I did call him back.  We then talked until almost 3:00 a.m.  You see I had gotten a pager from my boss when I was working at the law firm, so he could reach me in the court house, and I had gotten Dave's drummer's old number because he had lost his pager.  My friends it was FATE! ~hehe~ Well, it took him about two & a half days to talk me into letting him meet me.  Come on!  I didn't know if he was some kind of serial killer or stone ugly with 3 eyeballs or weighed 500 lbs. & had dragon breath or what???  But he did sound awfully nice, and he did tell me he was a musician, and yes, he sang to me over the phone.  (insert another awwwwwwwwwww here).  Well, he came over, and I couldn't believe my eyes when he came to my front porch.  This man was HOT!  OH Lordy, be still my heart!!  And what did I say when I answered the door?  Can I help you?  Ahhh Geez, how dumb was that?  We went to the beach, & had a fantastic time.

On the way home we stopped at my cousins tavern for a glass of wine, and a tune came on the juke box.  Righteous Brothers, and he asked me to dance, and it became our song.  The rest is history.  Oh yes, one last note.  We dated for eight years.  I didn't get married again until my last child was married. I wasn't looking for a father for my children.  I was looking for a husband for me.  I hope you can understand that.  Actually Dave was a bachelor, no kids, and 42 yrs. old when we married a few days before Christmas in 1999.  We eloped, and that is the story of how we met.  My wrong number became my destiny, my happiness, and my Soul-mate.

And now stay tuned for, "The Death of a Faucet"!

Yes, after ten years of good service my faucet has died.  The other night I had moved the faucet to the left and that's where it stayed.  I could not move it back, so my husband tried to move it using brute force, and this is what we ended up with (left pic).  Yes, he decapitated my faucet.
The faucet we had for ten years was a Moen. Ten years I'd say not bad.  No not bad at all.  I went to their website to try, and find my old faucet, but evidently they don't make it anymore, but they do have 1,000, and their motto is, "Buy it for looks.  Buy it for life."  WRONG!  Unless you've saved your paperwork and receipt probably.  I'll have to do some heavy research to try, and find out how to get my money back.  LOL

This time my hubby decided to buy a Delta.  As you can see this time we got a faucet that you can put a filter onto.  I really want to get one of those PUR filters for my faucet.  (Don't forget about my give-away.  It's over on the 31st.  Going to have to find me a give-away now to get that filter.  he~he). They too have a Lifetime Faucet and Finish Limited Warranty,  "Delta will replace FREE OF CHARGE, during the warranty period (duh - it says lifetime) any part or finish that proves defective in material and/or workmanship under normal installation.  Okay, I want to know who is the judge of this, and what is abnormal installation.  If there's anything abnormal about this installation it has to be my husband doing it.  He is a MUSICIAN!  NOT - A plumber, but I'm so proud of him.  He put the first one in ten years ago with no help, and he did this one too.  No trial and error at all.  He remodeled this whole house too.  oooo That would be a post to do for you guys!  The before and after of this house.  Our home was a handy man special and we got it for a song.  I did take movies of the before and after, so maybe I will do that for you.  My husband did all the remodeling himself, and he never did anything like this before either.  There was a few trial and error, but only a few.  His family and myself are so proud of him.  I'm so glad his wonderful Mom lived long enough to see her 42 yr.old bachelor son get married, and buy his own home shortly after that.  She was proud.

Okay I'm going to save this one, and see what happens, and staple my receipt with it.  I'm NOT going to pay for another one when they say LIFETIME WARRANTY!

Now for your chuckle of the day yes, I did get squirted at least three times.  forgetting the faucet was broke I turned the water on, and I got it down the front of my shirt, and had to clean up the mess.  Then after I cleaned up the mess you would think I learned HA!  NOT!  Put it on again I did, and this time in the mug!  Oh boy!  What a picture that would've made, and NO. NO PICTURES.  Sorry, didn't think to snap one!

My question is:  How did you learn to cook?

Well, my father was a cook in the army, so there were a few things I learned from him, but I think on the most part I learned from my grandmother because I stayed with her quite a bit when I was little (weekends, spring vacation, summertime etc.), and she was from the old country so she did everything homemade.  She didn't believe in store bought bread or mops, let me tell ya, but man she sure could cook up a storm.  She was from Palermo, Sicily.  Need I say more!

THURSDAY AWARDS * and two special people!

Now my baby girl Cheryl from CMash loves to read  presented me with this award, which is new to me, and I'd like to thank her from the bottom of my heart.  I know this has taken me a while to get to because I have been very busy transcribing lately.  It's either feast or famine in this business, so we've been feasting lately.  

Now, before I get down to it I'd like to take a brief moment to ask you all to remember my good friend Cheryl in your prayers.  She is going to be having surgery shortly, and that is never any fun!  Let's all wish her luck on her upcoming voyage to recovery, and all our best wishes, and prayers!  thank you.

Criteria:

1.  I'm allergic to iodine and bee stings.  That's why you won't find one flower growing on my property.
2.  I met my husband through a wrong number, but that's another post waiting to happen. LOL
3.  My oldest daughter was almost a firecracker, but she decided she wanted her own day for celebration and came a day early.
4.  My name was supposed to be Patricia or Susan & my mom & gramma decided to name me themselves & it got changed to Marie Ellen, but my dad went to see me in the nursery & said which one was his.  She said she was standing by her (she was holding another baby couldn't point) & he said you're by the toys.  He said I looked like a dolly laying there all still & quiet & the name has stuck with me ever since.  Hence, Dolly.
5.  Middle name is Adeline after my grandmother, but they called her Nelly.
6. I love to dance.
7. I quit smoking 10 yrs. ago this past February.
8. I also love to crochet.
9. Reading puts me to sleep.
10.  Whew!  I must be a dull person this is getting hard.  I so need to get a life.  I use to work four jobs when I was a single mom.  One for each child that I had.  ~hehehe~

Now also, I received another award from another new friend at Hearts Make Families
and I've had this award already, so because I have a doctor's appointment, and have to fly I'm just going to say thank you, thank you, thank you from the bottom of my heart!  Have a fun great day everyone!

My question is:  Do you and the hubby (or significant other) have a song that's your very own & what is it?

On our first date we stopped at a lounge where my cousin was working, and an old song came on the juke box by the Righteous Brothers called Unchained Melody, and we danced our first dance.  That's our song.

Chipotle Ranch Salmon Burgers
Prep Time: 10 minutes Cook Time: 10 minutes Makes: 4 servings

Ingredients


1 (12.8 oz) package SeaPak® Salmon Burgers
2 Tablespoons chipotle pepper sauce
1/4 cup ranch dressing
4 slices red onion
4 ripe vine tomatoes
4 leaves green leaf lettuce
4 slices pepperjack cheese (if desired)
4 hamburger buns

Directions


PREHEAT grill to medium-high heat.
COMBINE chipotle pepper sauce and ranch dressing, set aside.
GRILL salmon burgers according to package directions. Remove from grill.
PLATE by placing salmon burger on bun and topping with lettuce, onion, tomato and cheese. Spread chipotle-ranch sauce on inside of hamburger bun top half. Serve immediately.

LENT- MEATLESS FRIDAYS & SEA PAK & a RECIPE BOOK GIVE-AWAY!

Lent is a time for fasting & abstinence:  Christ Himself said that His disciples would fast once He had departed' Lk. 5:35

Abstinence: The law of abstinence requires a Catholic 14 years of age until death to abstain from eating meat on Fridays in honor of the Passion of Jesus on Good Friday.  Therefore, it's time to get the fish recipes out.  My grandmother use to make Buckala, which was a traditional Christmas Eve delicacy, but she made it at lent too.  Well, I don't cook as well as my grandmother did, so I rely on SeaPak to give me a helping hand!  I've bought a lot of fish in my time, but SeaPak is the one that I rely on for it's freshness and good taste.  I was brought up on spices, and so it's not a wonder that my favorite is Shrimp Scampi in butter and garlic sauce.  

The Shrimp Scampi is in authentic butter and garlic sauce, and it's great over pasta, which is just what we did Friday night!  Here's my hubby feeding his face & wouldn't even stop to smile.

We also had some Tempura Shrimp dipped in an authentic tempura batter, and it comes with a sweet, and spicy orange dipping sauce.  Those are my husband's favorite.

I also love to cook, and make changes to some recipes of my own, so I did take the recipe from the box, and changed a couple things that I noted below.

I added a different type of pasta as you see here, but the butter and garlic just mingled with the spaghetti, and I used stir fried mixed veggies with a dash of olive oil and oregano.  Mmm tasty!

Scampi with Broccoli Florets
Scampi with Broccoli Florets

Prep Time: 5 minutes Cook Time: 10 minutes Makes: 2 servings
 Ingredients:

1 (12 oz) package SeaPak® Shrimp Scampi - Butter and Garlic, frozen
1 cup orzo, cooked
1/2 cup broccoli florets, cut into small pieces

Directions:

 SAUTÉ shrimp in large pan for 3 minutes over medium. Add broccoli florets to pan and stir with shrimp. Continue sautéing the shrimp and broccoli over medium heat for 5 to 7 minutes or until shrimp are fully cooked.  Then add your shrimp right on top of your pasta.
