Aloha Follow Friday, NEVER GROWING OLD, & Photo Flashback!

Alicia at More than Words started "Friday Photo Flashback". I'm having a blast & you can too! Dig out your photo album! Don't forget to sign up so we can all visit and comment on each others pics/blogs! IT'S GREAT FUN!   The top picture (1968) is my family in the house where I grew up.  From right to left is my Grandmother (Nana), Mom, Dad, Aunt Bernice, and my Godfather & Dad's older brother Uncle Robbie who my youngest son was named after, but they're both Robert, but Mom started to call him Rocky (or Rocco) instead of Robbie.  This little girl is in the same house with my mom's dog Peppy.  Now I bet you're wondering who she is!  ~hehe~  Okay! Okay!  That's NightOwlMama (my baby girl - Tricia Lita, a nickname my Dad use to call her).  This is Dec. 1969.

Are you a blogger over 40? Yeah, welcome to the club!
Please join in the fun over at Java's place, and get to know your fellow bloggers at Never Growing Old!!
GRAB JAVA'S BUTTON!  She's such a sweetie!  Thanks Java for hosting a fun meme!

I loved my Connie Stevens doll.  (She was like a Barbie).  I loved making clothes for her, and I loved my phonograph.  Had lots of records too.  My favorite game was "Life"!

Wasn't that fun?  ~hehe~  Have a Great Weekend Everyone, and THANKS for stopping by, and following me.   Oh!  Don't forget about "MONDAY'S MUSIC MOVES ME".  This month's theme is:  "Amor"!  Yes, my darlings it's the month of love!  Each and every Monday we are going to have nothing, but songs of  "LOVE"!  So, get in the mood cuz we're going to turn up the temperature a bit, and get ready for a very romantic Valentines Day!  I truly hope you ALL can make it. It's tons of fun!  Bring a friend!  Hell, bring lots of friends.  Have a great weekend!

RECIPES FOR OVER-THE-HUMP/WORDFUL WEDNESDAY

This week I'm going to give you a recipe that my mother-in-law gave me back in the early 90's, and I've been making it ever since. We love it in our home & I hope you will too. This week's recipe is "Impromptu Meatballs".

IMPROMPTU MEATBALLS
1 lb. of ground beef
bread crumbs
2 eggs
salt, pepper, marjoram, thyme
2 large can of tomato sauce
spring noodles
chopped onion
1/2 cup of brown sugar
2 tbsp. vinegar
2 tbsp. barbecue sauce
2 tbsp. Worcestershire sauce

First of all, let's boil our squiggley noodles until done, rinsing in cold water.  Preheat your oven at 350 degrees.  Let's make the meatballs.  Put your ground beef in a bowl, and then add your bread crumbs,  two eggs, garlic powder, a touch of oregano & accent, seasoned salt, pepper, marjoram, thyme.  Most of this is to taste.  Mix, and make little meatballs.  Fry them until they are about medium done.

After which we will now make the sauce put garlic powder, onion powder, seasoned salt, pepper, marjoram, thyme, 2 large can of tomato sauce, 1/2 cup chopped onion, 1/2 cup of brown sugar,
2 tbsp. vinegar, 2 tbsp. barbecue sauce, and 2 tbsp. Worcestershire sauce, and mix.  Then taking your baking pan sprinkle some sauce on the bottom until covered.  Add cooked noodles, then your meatballs, pour you sauce all over everything and mix.  Once you're finished sprinkle some Parmesan cheese on top, and bake for 30 minutes.  Bona Petite!

Valentine's Day Dinner!

As in a previous Post I showed you where my hubby took us, the Arcada theater to see Maceo Parker.  We had a blast listening to some down home "Funk"!  Valentine's Day I thought I'd clean up the house really good, and set the table really nice & have a candlelight dinner for two!
(Hubby brought me home a card on the table)
NUMMERS!
We have a frontroom & dining room  combined.  I worked hard all day & I made us Spinach & Mushroom Manicotti for dinner!  I made authentic Italian sauce with the fresh garlic, meatballs & Italian sausage & let that simmer all day.  I even put my Nana's family secret ingredient in there & simmered it all day! mmmmmmmmmmm  It was great!   Normally you wouldn't put so much sauce on top, but my hubby likes his smothered!
Okay, so you're dying for the recipe aren't you.  Well, maybe not the sauce, but how about the Manicotti!  Actually, I got a recipe off the box for the Spinach & Mushroom Manicotti, but I gave it my own flare.

1 box of Manicotti    -   2 garlic cloves
2 T. of extra virgin olive oil
1/2  bag of fresh spinach
Fresh mushrooms chopped   -  2 eggs
1 tsp. of seasoned salt         1/2 lb. of ricotta cheese
1/3 cup of chopped basil leaves
2 T. of cooking wine

*While preheating oven to 350 - Cook Manicotti for 7 minutes and rinse/drain in cool water - set aside.   Take a large frying pan put your chopped fresh mushrooms in a pan of your olive oil and chopped garlic and 2 T. of cooking wine and saute for 5 minutes stirring occasionally.  Then put your chopped spinach mix in with mushrooms etc. cooking for five minutes.  Set aside to cool.  Take your eggs & beat lightly in a bowl after which you pour your ricotta cheese with it, basil and salt then stir in mushroom/spinach/garlic mixture in the bowl too!  Add any spices you like.  I added a touch of garlic powder, pepper, and oregano.

Get your baking pan and pour some of you sauce covering the bottom.  Fill the Manicotti... I find if you hold the cooked Mancotti actually straight up in the mixture and take a teaspoon & pour it down the Manicotti it's easier that way without anything falling out the bottom.  Once it is stuffed hold it straight up with one hand, and then take a spatula and put it in your baking pan.  Once your pan is full sprinkle some shredded mozzarella cheese on the plain Manicotti then take a ladle and pour your sauce over them.  Then sprinkle parmesan cheese and bake for 30 minutes.

Let me add one thing here when your cooking your sauce all day I started mine at noon & it simmered all day for six hours.  I also cooked fried my meatballs and sausage, and taking grease & pouring it all into the sauce & cooked it together. mm There ya go my friends!  Bona Petite!
Now, what I want to know is who's gonna
clean up this mess?
HUH?!!??
