Southern Fried Cornbread Recipe

Yummy!  I found this on Facebook and I wanted to share!!!

Ingredients:
2/3 cup cornmeal
1/3 cup self rising flour
1/3 cup low fat buttermilk
1 large egg
oil for frying (I used about 3 tbsps coconut oil, but you can use whatever you like)
Directions:
Combine first 4 ingredients together in a bowl, mixing well. Mixture should be very moist but not soupy. Heat oil in skillet and drop by spoonfuls into oil. Cook til brown on one side and flip (it cooks kind of like a pancake) to brown on the other side. Place on plate with paper towels and blot any excess oil.

Oh, does this look good! Might be bad for the cholesterol levels though.

I have a question for you. It says to use low-fat buttermilk. Is there any other besides low-fat? It's all I can find here on the west coast. Do you have other varieties of buttermilk where you live?

We are going to have some brownies tonight. They have just been taken out of the oven, and they smell heavenly!

Would regular milk work or no? I just bought a bag of cornmeal from the Amish store and was wondering what to do with it. This recipe looks yummy and I may just make it.

Well, as I said I found it on facebook so I'm not really sure if regular milk would work. It may give it a different flavor I imagine.
