Okay, you all know I'm on one of these life-long diets, but got a bit serious lately when doc says lose it or...  So far I've lost 24 lbs.  Woo Hoo!  Yeah, right! So not enough so I'm still working at it.  So tonight my supper will be my recipe!

Spinach Omelette

2 eggs
a dribble of skim milk
a dash of pepper, garlic, season salt, onion powder
a sprinkle of shredded mexican style cheese
one tomato chopped (from my garden)
one green onion chopped (from my garden)

Cook:  I cook the bottom part of the omelette then put in my veggies and half turn - cook a bit more and flip.  Wait a few minutes and shut off the flames.
Okay, so I broke my omelette.  It all tastes the same right? LOL

I am so proud of you on your weight loss - you ROCK mama!!
This sounds so delicious and congrats on the onion and tomato from your garden - I love fresh produce, I wish I could grow some down here. I cannot make an omelet to same my life, they always fall apart and turns into scrambled eggs, HaHa. But you're right, it tastes good any way. HUGGLES!
