CUCUMBERS ON ICE! Thursday's Recipe Swap Meet!

WELCOME TO OUR 18th "RECIPE SWAP MEET"!
"Oh no, what am I going to make tonight"?   Why not pick one of our Recipes!  Your grandmother's secret recipe has a coming out party   and it's tonight!

I got this recipe from a friend I went to school with.  I don't know what it's called, but it's very tasty in the summertime and something fast to put together when you're invited out on a picnic or summer party, and you would like to bring something.  So, let's call it ummmm... "CUCUMBERS ON ICE"!


Peel  large cucumber and slice
Peel  medium onion and slice
Mix 1 cup vinegar in a jar
1 1/8 to 1/4 cup sugar (you can also use artificial sweetner mix to taste)
Mix everything together in a bowl and let set overnight.
Put it in a big jar if you like and serve chilled.

Me either. There in so many dishes though that I wish I did. Hey....I do like pickles!

I love this dish! I add fresh, peeled tomato pieces as well. I can't wait until my garden starts giving me tomato and cucumber. Looking pretty good so far!!

I love fresh cucumbers on ice. My mom used to put them in a bowl with ice water, salt and a little dill. I forgot all about that - thanks for reminding me. I really like to make it with English cucumbers as they have less seeds.
Sounds like a truly yummy salad for the summer.
Do you know I have put on about 5 pounds since we started this meme - UGH!! =) But it is SO worth it.
